This tiki-inspired spiced rum and amaro cocktail is named for the Hawaiian way to say ‘Merry Christmas.’ Merrymeeting Spiced Rum from Portland Maine’s Three of Strong Spirits fortifies with flavors of cinnamon and ginger, while Amaro Amorino brings bitter orange and baking spice to the mix. A couple of dashes of Hella Aromatic Bitters emphasize the bittersweet flavors and add a finishing touch of clove and allspice.
Ingredients
- 1/2 cup White Sugar
- 1/2 cup Water
- 2-3 Cinnamon Sticks

- 1.5 oz. Merrymeeting Spiced Rum
- 0.5 oz. Amaro Amorino
- 1 oz. Lime Juice
- 0.75 oz. Pink Grapefruit Juice
- 0.75 oz. Cinnamon Syrup
- 0.25 oz. Ginger Syrup
- 2 dashes Aromatic Bitters
- Cinnamon Sticks, for garnish
- Anise Star, for garnish

For the Cinnamon Syrup
- Heat sugar in water until dissolved
- Add cinnamon sticks and bring to a boil
- Allow to simmer for 5-10 minutes, then remove from heat
- Allow to cool and then strain into a glass jar
For the Ginger Syrup
- Heat sugar in water until dissolved
- Add ginger and bring to a boil
- Allow to simmer for 5-10 minutes, then remove from heat
- Allow to cool and then strain into a glass jar
For the Cocktail
- Combine all ingredients in a cocktail shaker with cracked ice
- Shake until chilled, then open pour into a Viski Crystal Whiskey Tumbler
- Top with crushed ice and garnish with cinnamon sticks, star anise, and an edible flower, if desired
