Seated at the foot of the Appalachian Mountains in Vermont is Appalachian Gap Distillery. Surrounded by Vermont woodlands, they’re devoted to two things, producing the best possible craft spirits they can and reducing their carbon footprint in the process.

Already home brewers that prided themselves on impressing friends, acquaintances and strangers with a pint of their latest beers, Appalachian Gap Distillery founders Chuck Burkins and Lars Hubbard attended a weekend distilling class in Geneva, N.Y. One simple retreat in 2010 transformed a hobby into an obsession for Chuck and Lars.

They quickly got to work creating a line of unique craft spirits in their solar-powered distillery. Inspired by a Swedish folk tradition, Kaffekask, one of Appalachian Gap’s first craft spirits, is an aromatic white whiskey distilled through freshly ground coffee. Searching for something new? The Quill (a variation on a classic Negroni)


Ingredients:
  • 0.25 oz. Absinthe
  • 1 oz. Campari
  • 1 oz. Carpano Antica
  • 1.5 oz. Mythic Gin
Directions:
Combine all ingredients in a shaker with ice. Shake. Strain into a chilled glass. Garnish with an orange peel.

VT Gimlet


Ingredients:
  • 0.25-0.5 oz. Vermont maple syrup (depending on how sweet you like your cocktails)
  • 0.5 oz fresh lime juice
  • 1.5 oz. Mythic Gin
Directions:
Add all ingredients to a shaker with ice. Shake and strain up or on the rocks.

The Mythic Garlic Martini


Ingredients:
  • 0.5 oz Lillet Blanc
  • 1 Garlic Clove
  • 1-2 turns of Fresh Ground Pepper
  • 2.5 oz. Mythic Gin
Directions:
Combine gin, Lillet and pepper in a mixer with ice. Stir until very cold. Smash garlic clove and place in the bottom of a chilled glass. Strain martini straight up over garlic clove.

The Corpse Reviver #2


Ingredients:
  • 1 or 2 drops Absinthe or Pernod
  • 1 oz. Cointreau (Check out BigFish's craft spirit selection for possible substitutes!)
  • 1 oz. fresh lemon juice
  • 1 oz. Lillet
  • 1 oz. Mythic Gin
Directions:
This is a classic cocktail designed to bring you back from your hangover (hence the name). It’s also a cocktail that uses equal parts of everything, which makes it an easy recipe to remember. Drink them all night and then let it help you recover the next day!

A Basil Transition


Ingredients:
  • 0.5 oz. simple syrup
  • 0.5 oz. St Germain Elderflower Liqueur
  • 0.75 oz. Lemon juice
  • 1.5 oz. Mythic Gin
  • 2 Basil leaves
Directions:
Muddle basil leaves in bottom of a shaker. Add all other ingredients and shake until very cold. Strain straight up into a chilled glass, garnish with a snapped basil leaf.

The Envious Martini


Ingredients:
  • 0.5 oz. Green Chartreuse
  • 0.5 oz. Lillet Blanc
  • 3 oz. Mythic Gin
Directions:
Add all ingredients in a container with ice. Stir to chill, strain into a chilled glass. Cheers, and keep it classy.

The Amaro-Tinez


Ingredients:
  • 0.25 oz. Lillet Blanc
  • 0.25 oz. Luxardo
  • 1 oz. Amaro Averna (less sweet) or Meletti (more sweet)
  • 2 oz. Mythic Gin
Directions:
Add ingredients to ice, stir to chill and strain. Serve up with a citrus peel.

The Vesper Martini


Ingredients:
  • 0.25 oz. Lillet Blanc
  • 0.75 oz. Fractal Vodka
  • 2 oz. Mythic Gin
Directions:
Add all ingredients to a mixing glass with ice. Stir until very cold and strain, straight up, into a chilled glass. Garnish with a twist of lemon.

The Lonesome Cowboy Bill


Ingredients:
  • 0.5 oz. Benedictine
  • 0.5 oz. Kaffevan Coffee Liqueur
  • 0.75 oz. Fernet Branca
  • 1 bar spoon Pernod
  • 1.5 oz. Mythic Gin
Directions:
Combine all ingredients in a mixing glass with lots of ice. Stir until very cold and strain into a chilled glass. Garnish with an orange twist.

All Tomorrow’s Parties


Ingredients:
  • 0.25 oz. Yellow Chartreuse
  • 0.5 oz. Fresh lemon juice
  • 0.5 oz. Fresh Lime Juice
  • 0.75 oz. Rosemary Simple Syrup
  • 1.5 oz. Mythic Gin
  • Muddled mint
Directions:
Muddle mint and simple syrup in the bottom of a shaker. Add all other ingredients with ice and shake. Strain over ice and top with a dash of soda water. Garnish with rosemary and a twist of lemon.

That’s What I Menta


Ingredients:
  • 0.25 oz. Branca Menta
  • 0.5 oz. Benedictine
  • 0.75 oz. fresh lime juice
  • 1.5 oz. Mythic Gin
Directions:
Combine all ingredients in a shaker with ice. Shake, shake, shake like crazy and strain over ice.

My Straw Tastes Like an Onion


Ingredients:
  • 0.5 oz. Campari
  • 0.5 oz. Green Chartreuse
  • 0.5 oz. lime juice
  • 1.5 oz. Mythic Gin
  • 2 Large Basil Leaves
  • Green Onion
Directions:
Muddle basil and lime in the bottom of a cocktail shaker. Add other ingredients and ice, then shake till super cold. Double strain either up or on the rocks. Garnish with a section of green onion (trust us).

The Bashful Betty (a variation of a Blushing Betty


Ingredients:
  • 0.5 oz. simple syrup
  • 1 oz. Fresh Squeezed Ruby Red Grapefruit Juice
  • 2 oz. Papilio Agave Spirit
Directions:
Combine all ingredients into a cocktail shaker with ice, shake, strain. Serve up or on the rocks with a grapefruit twist.

Bracing For Mud Season


Ingredients:
  • 0.5 oz. Amaro Averna
  • 0.5 tsp Brown Sugar Simple Syrup
  • 2.5 oz. Papilio Agave Spirit
Directions:
Combine all ingredients, with ice, in a mixing glass. Stir until ice cold and strain, straight up, into a chilled glass. Garnish with a thin slice of lemon peel.

Una Mas


Ingredients:
  • 1 oz. Cynar
  • 1 oz. Papilio Agave Spirit
  • 1 oz. Punt E Mes
  • 2 drops Urban Moonshine Citrus Bitters
Directions:
Combine all ingredients in a mixing glass with ice. Stir until cold and strain straight up or on the rocks. Garnish with a flamed orange peel.

Sister Ray


Ingredients:
  • 0.5 oz. Campari
  • 0.5 oz. Fresh Grapefruit Juice

Ingredients:

Fernet About It


Ingredients:
  • 0.25 Oz. Fernet Branca
  • 0.75 oz. Carpano Antica
  • 1.5 oz. Ridgeline Vermont Whiskey

Add ingredients to a glass with ice. Stir until very cold and strain straight up or on the rocks. Garnish with a slapped mint leaf.

The Boulevardier


Ingredients:
  • 1 oz. Campari
  • 1 oz. Carpano Antica (or any sweet vermouth of preference)
  • 2 oz. Ridgeline Whiskey
Directions:
Combine all ingredients into a shaker, stir, and strain over ice or straight up. Garnish with an orange peel.

The Orchard Manhattan


Ingredients:
  • 1 oz. Champlain Orchards Honeycrisp Ice Cider
  • 2 dashes Angostura Bitters
  • 2 oz. Ridgeline Whiskey

The Suburban


Ingredients:
  • 0.5 oz. Mosquito Fleet Rum
  • 0.5 oz. Port
  • 1 dash Angostura bitters
  • 1 dash orange bitters
  • 1.5 oz. Ridgeline Whiskey

Add all ingredients to a shaker with ice. Stir until very cold and then strain, straight up, into a chilled glass. No garnish.

'Vanhattan'


Ingredients:
  • 0.5 oz. Carpano Antica
  • 1 oz. Kaffevan Coffee Liqueur
  • 2 oz Ridgeline Whiskey
  • 4 dashes Angostura Bitters

The Folding Stroller


Ingredients:
  • 1 tsp Sumptuous Syrup Red Cinnamon
  • 2.5 oz. Ridgeline Whiskey
  • 8 dashes Angostura Bitters
Directions:
Combine all ingredients in a mixing glass with ice. Stir until ice cold. Strain straight up and serve with a twist of lime.

The Kindling


Ingredients:
  • 0.5 oz. Fernet Branca
  • 0.5 oz. Yellow Chartreuse
  • 2 oz. Ridgeline Whiskey
  • 2-3 dashes angostura bitters
Directions:
Combine all ingredients in a mixing glass with ice and stir until very cold. Strain over a large cube and garnish with lemon.

Cool It Down


Ingredients:
  • 0.5 oz. Brown Sugar Simple Syrup
  • 0.5 oz. Fresh Lime Juice
  • 0.5 oz. Ginger Liqueur
  • 1.5 oz. Ridgeline Whiskey
Directions:
All ingredients in a shaker with ice. Shake shake shake and strain on the rocks. Garnish with some lime and sip in the sunshine.

Snowy Owl


Ingredients:
  • 1 oz. Kaffevan Coffee Liqueur
  • 2 oz. Snowfall Unaged Vermont Whiskey
Directions:
Place crushed ice in an AppGap Rocker Glass. Add spirits, then spin gently to blend.

Buels Gore


Ingredients:
  • 0.5 oz. Fresh Lime Juice (pulp strained out)
  • 0.5 oz. Fresh Orange Juice
  • 0.75 oz. Ruby Port Syrup*
  • 1.5 oz. SnowFall Vermont Whiskey
Directions:
Combine all ingredients into a mixing glass and shake vigorously. Double strain into a chilled cocktail glass. *To make the Ruby Port syrup, combine equal parts superfine granulated sugar with ruby port over low heat until sugar is dissolved. Cool and store in the refrigerator.

“Hey Liz, Thanks for all the Peaches”


Ingredients:
  • 0.5 oz. Fresh lemon juice
  • 0.5 oz. Luxardo Maraschino
  • 0.75 oz. Lillet Blanc
  • 0.75 oz. Peach Purée*
  • 1.5 oz. Snowfall White Whiskey
Directions:
Combine all ingredients in a shaker with ice. Shake and double strain into a chilled glass. Garnish with a small sprig of rosemary. *To make the peach purée, put a bunch of pitted peaches (skin on) into a blender and purée. Easy as that! And of course, remember to thank your friend for all the peaches.

Henry Approves


Ingredients:
  • 0.25 oz. Honey Simple Syrup
  • 0.5 oz. Ginger Liqueur
  • 0.75 oz. Elderflower Liqueur
  • 0.75 oz. Lemon juice
  • 1.5 oz. SnowFall Vermont Whiskey
Directions:
Combine all ingredients in a shaker with ice. Shake until ice cold and strain over a big cube. Garnish with a twist of lemon.

The Trustworthy Friend


Ingredients:
  • 0.25 oz. Carpano Antica
  • 0.25 oz. Ginger Liqueur
  • 0.25 oz. Kaffevan
  • 0.5 oz. Campari
  • 1 mint leaf
  • 2 oz. Snowfall Vermont Whiskey
  • 5 dashes Angostura Bitters
  • 5 dashes Peychaud’s Bitters
Directions:
Muddle mint in bottom of mixing glass, then add all ingredients and ice. Stir until very cold and then double strain over a large cube.

Mountain Jam


Ingredients:
  • .5 tsp. honey
  • .75 oz. fresh lemon juice
  • .75 oz. fresh orange juice
  • 1 tsp. raspberry preserves
  • 2 oz. Ridgeline Whiskey
