We've always said that maple syrup has more uses than being drizzled over a stack of pancakes or waffles, and this robust spirit reiterates that. The mash that enters used maple syrup barrels from the Griner Family Sugar Bush is the same as the one used in Iron Fish's original Bourbon Whiskey Finished in Maple Syrup Barrels. However, when the maple, oak, and bourbon are done mingling in the barrel, this Barrel Strength version isn't diluted, and goes right into the bottle at the same proof it came out of the barrel at. Surprisingly mellow for barrel strength, the first sip is rich, slightly sweet, and reminiscent of caramel spread. Gradually, cinnamon and nutmeg work their way into the flavor and build into a hot roar on the tongue, tempered by faint notes of maple syrup.
